Existing and proposed ingredients used to replace fat span a range of physical and chemical properties, with varied functionality and differences in their potential physiological effects. Although the safety and functionality of such ingredients and technologies have been scrutinized by industrial and governmental bodies, there has been rather less consideration given to assessments of their likely effects on food intake and nutritional status. It is often assumed that products made using fat replacement technologies would help to reduce fat intake and aid in weight control, despite little research directly assessing the effects of purchase and consumption of these products by normal consumers in the domestic environment. This review considers existing and proposed fat replacers and reduced-fat foods, focusing on their potential beneficial and adverse influences on diet and nutrition, highlighting the possible implications for fat intake and energy balance. Konsequenzen der Anwendung von Fettersatzstoffen auf die Ernährung und die Nahrungsaufnahme. Die zunehmende Entwicklung und Vermarktung von Fettersatzstoffen hat zu eingehenden Überlegungen in bezug auf einen übermäßigen Fett-und Energieverbrauch geführt. Die zur Zeit verfügbaren und vorgeschlagenen Fettersatzstoffe umfassen einen großen Bereich physikalischer und chemischer Eigenschaften mit sehr unterschiedlicher Funktionalität und auch Unterschieden im Hinblick auf mögliche physiologische Auswirkungen. Obwohl die Sicherheit und Funktionalität derartiger Ersatzstoffe und Technologien bereits in der Industrie und durch die Behörden untersucht wurden, gibt es bisher kaum Überlegungen im Hinblick auf die Bewertung oder zu erwartende Effekte auf die Nahrungsaufnahme und den Wert der Fettersatzstoffe als Nahrungsmittel. Häufig wird vermutet, daß durch Verwendung von Nahrungsmitteln, die mil Hilfe von Fettersatzstoff-Technologien hergestellt wurden, sich eine Verringerung der Fettaufnahme und eine Gewichtsabnahme erreichen läßt, obwohl sich bisher nur wenige Untersuchungen mit den Auswirkungen des Erwerbs und Verbrauchs derartiger Produkte durch Privatverbraucher im häuslichen Umfeld befassen. In diesem Beitrag werden die derzeit verfügbaren und vorgeschlagenen Fettersatzstoffe und Nahrungsmittel mit vermindertem Fettgehalt behandelt. Dabei werden vor allem die möglichen Vorteile und auch die nachteiligen Einflüsse auf Diät und normale Ernährung behandelt, wobei die möglichen Auswirkungen auf Nahrungsaufnahme und Energie-Balance ausgiebig diskutiert werden." @default.
