The stimulation by anionic amphipathic substances of the hydrolysis of coarse lecithin particles catalysed by lycolecithin acylhydrolase (EC 3.1.1.5) from Penicillium notatum can be correlated with the changed ζ, potential of the substrate but not with its dispersion as judged by absorbance measurements. 2. Experiments with unimolecular films of lecithin suggest that the surface dilution of lecithin produced by the activating substances cannot account for the stimulation. 3. Ultrasonic dispersion of the lecithin substrate enhances the enzymic hydrolysis but by a lesser amount than the addition of long-chain anions. The faster rate of hydrolysis of ultrasonically treated lecithin could be produced by changes in the molecular organisation of the particles as well as by the increased surface area presented for enzyme attack." @default.
