- W210598461 abstract "This chapter discusses the feeding preferences of vertebrates, farm animals, sensory responses to stimuli from chemicals present in plant tissues, and flavor principles of some of the common fruits and vegetables. The ruminants respond to a range of chemical stimuli as a guide to feeding. These animals show a significant preference for sweetness; however, they also exhibit some requirement for a balanced taste involving the sourness of organic acids. They clearly avoid alkaloid-, cyanogen-, and tannin-containing plants whenever they can. Domestic cattle, however, will not have learnt to avoid all poisonous or dangerous plants present in wild pastures and will obviously not be able to survive unscathed when exposed to unfamiliar grazing lands. Detailed knowledge of the response of ruminants to the chemical composition of their foods and especially of their response to nutritional factors is still largely unavailable. Much work is needed in the future to analyze with more refined techniques the behavioral responses of farm animals to the plants they ingest." @default.
