- W2156765366 abstract "Abstract Potato starch was crosslinked with epichlorohydrin. The swelling of this starch was shown to follow the classical theory of swelling of polymer networks under conditions where all crystalline order in the granules was destroyed. This theory was then developed to consider three component systems consisting of polymer, solvent, and solute. The solute was taken as being able to permeate the gel network. The theory was tested using vulcanized rubber, a system known to obey the classical equation for swelling in the presence of a single solvent. Measurements were made of the influence of sugars on the swelling of the crosslinked starch. These measurements could not be interpreted using the theory of swelling in a solute-solvent-polymer system, possibly because the theory did not predict the behavior of the sugar in the gel correctly. A comparison was made of the effect of adding sugar to the starch-water system before and after gelatinization. The addition of sugars prior to gelatinization appears to alter the structure of the gel particles formed during this process." @default.
