- W2165116707 abstract "Abstract INTRODUCTION IT IS well recognized that synthetic thiamine hydrochloride is unstable in certain purified diets (Briggs et al., 1943; Rombouts and Querido, 1946; Hankes and Elvehjem, 1949; Lyman and Elvehjem, 1951; Kandutsch and Baumann, 1953). Rombouts (1953) demonstrated that certain salt mixtures exerted a detrimental effect upon synthetic B vitamins when used in purified rations. This destruction of the B vitamins, as measured by the growth of rats, showed a certain correlation with the concentration of hydrogen ions with which the salt mixtures are in equilibrium with when suspended in water. A systematic investigation of the stability of thiamine to heat at different pH values and salt concentrations was undertaken by Beadle et al. (1943). The results indicated that synthetic thiamine possessed a different stability at various pH values. From studies with the individual salts used in the preparation of salt mixtures, Waibel et al.
