Microbiol. 12:523-535. 1964.-The relative abilities ofPediococcuscerevisiae, Lactobacillus plantarum, L.brevis, andseveral other species oflactic acid bacteria togrowandproduce acid in brined cucumbers wereevaluated inpureculture fermentations. Suchfermentations weremadepossible bytheuseoftwotechniques, gammaradiation (0.83 to1.00Mrad)andhot-water blanching (66to80Cfor5min), designed first toridthecucumbersofnaturally occurring, interfering, andcompetitive microbial groups prior tobrining, followed byinoculation withthe desired lactic acid bacteria. Oftheninespecies tested, strains of thethree commontocucumber fermentations, P.cerevisias, L. plantarum, andL.brevis, grewtothehighest populations, and produced thehighest levels ofbrine acidity andthelowest pH values infermentations at5.4to5.6%o NaClbyweight; also, their sequence ofactive development infermentations, withthe useofathree-species mixture forinoculation, wasinthespecies order just named. Thissequence ofoccurrence wassimilar to thatestimated byothers fornatural fermentations. Therates of growth andacid production infermentations withamixture of P.cerevisiae, L.plantarum, andL.brevis increased astheincubation temperature wasincreased from21to27to32C;however, themaximal populations andacidities attained wereessentially thesameforfermentations ateachtemperature. Further, these samethree species werefound tobethemostsalt tolerant of those tested; their upper limit forappreciable growth andmeasurable acid production wasabout 8%salt, whereas thermophilic species suchasL.thermophilus, L.lactis, L.helveticus, L.fermenti, andL.delbrueckii exhibited amuchlower salt tolerance, ranging fromabout 2.5to4.0%. However, certain strains ofL. delbrueckii grewveryrapidly incucumbers brined at2.5to 3.0%salt, andproduced sufficient acid inabout 30hrat48Cto reduce thebrine pHfromabove7.0tobelow 4.0.
