- W2188484599 abstract "Maximalshelf life was determined andmicrobial flora were compared forirradiated (0.1 and0.2Mrad)andnonirradiated yellow perch fillets stored at1C. Shelf life was estimated byorganoleptic determinations. Microbiological studies included determination oftheeffects ofirradiation on thetotal aerobic microbial population, lagphase, andrateofgrowth. Generaoforganisms isolated from fillets through thecourseofmicrobial spoilage wereidentified, andtheproteolytic activity oftheorganisms was determined. Plate countsforfish prior toirradiation showedthepresenceofapproximately 106organisms perg ofsample. Irradiation to0.1and0.2Mradproduced 1.4and3logarithm reductions oftheinitial count, respectively. Irradiation to0.1and0.2Mradapproximately doubled theproduct's shelf life. Organisms initially isolated fromthenonirradiated fillets, inorderof decreasing number, consisted ofFlavobacterium, Micrococcus-Sarcina, Achromobacter-Alcaligenes-Mima, Pseudomonas, Microbacterium, Vibrio, Bacillus, Corynebacterium, Lactobacillus, Brevibacterium, andAeromonas. Bythe6thand9thdaysof fillet storage, Pseudomonas andtheAchromobacter groupwerethepredominant organisms. Allmembers ofthegenusFlavobacterium, butnotallmembers ofthegenus Pseudomonas, wereproteolytically active on raw fish juice-agar andskimmilk-agar media. TheAchromobacter group was foundtobenonproteolytic on bothmedia. Residual flora offillets irradiated to0.1and0.2Mradconsisted oftheAchromobactergroup,Lactobacillus, Micrococcus-Sarcina, andBacillus. Their sequenceinpredominance, however, varied withdoselevel. Notallproteolytic bacteria inthe fillets wereeliminated by0.1and0.2Mrad;proteolytic Micrococcus-Sarcina survived these treatments." @default.
