- W2200660839 abstract "Tomato powder (TP) was used against the toxicity produced by thermally oxidized tallow (OT) in rabbits. Male rabbits were fed TP, OT alone or in combination. Serum biochemical markers, hematology and liver pathology were investigated. It was found that TP was rich in lycopene, β-carotene and phenolic compounds. Rabbits fed OT elevated the serum biochemical markers (total cholesterol, LDL, TG and ALT), which was reduced to normal ranges by the administration of TP. TP alone had significant positive effects on the HDL-cholesterol and LDL-cholesterol, but had no significant effects on hematological parameters. OT produced fatty liver, necrosis and in some cases, hepatitis in the rabbit liver. Supplementation of TP reduced the severity of fat generation, and restored the normal architecture of the liver. In conclusion, TP was protective against oxidative stress and consequent toxic effects, fatty infiltration and necrosis caused by thermally OT in rabbits. Practical Applications Tallow is widely used in food preparations. During thermal treatment, it is oxidized with the formation of oxidized compounds producing off-flavor in foods, which on ingestion causes several adverse effects. Tomato is one of the major components of food preparation and this report, which shows the ameliorative effects of tomato powder against the oxidative stress produced in animals provides an opportunity for controlling the toxicity produced by the oxidized tallow (OT) in rabbits." @default.
