- W2235984888 abstract "The aim of this thesis was to determine genetic variability and the effect of animal factors for [1] the intramuscular fatty acid (FA) composition and metabolism, and [2] plasma oxidative status traits in pigs. Studies of the intramuscular FA profile and metabolism were carried out on Longissimus muscle samples from a progeny of 5 boars (Large White × composite Large White × Pietrain line) and sows (Landrace × Large White). Effects of sex and intramuscular fat (IMF) content on the intramuscular FA profile were studied on a sub-sample of 121 animals. Relationships between indices for desaturase and elongase activity were investigated on a larger dataset (n=437). The same data were used to estimate genetic parameters for pork intramuscular fatty acid composition and indices for desaturase and elongase activities with single- and multi-trait REML animal models. IMF content was either or not included in the model to assess the effect of IMF content on the genetic parameters. Results indicated a strong relationship between the IMF content and the Δ9, Δ5, Δ6 desaturase and elongase activity indices in pork Longissimus muscle. Sex significantly affected the long chain n-6 and n-3 PUFA metabolism. Correlation analyses between indices for combined desaturase and elongase activity in the n-3 PUFA synthesis suggest that the last step in the synthesis of C22:6n-3 is independently regulated from the previous steps. It was concluded that the genetic variation appeared to be partly independent of the carcass and muscle fat content, theoretically allowing selection for altered meat FA composition. To study plasma oxidative status, blood samples were collected at slaughter from 486 Pietrain × (Landrace × Large White intercross) pigs. The plasma oxidative status of animals was assessed by measuring the Ferric Reducing Ability of Plasma (FRAP), α-tocopherol content, malondialdehyde (MDA) concentrations and glutathione peroxidase (GSH-Px) activity. Genetic parameters were again estimated using single- and multi-trait REML animal models. The results displayed that gilts had a significantly higher concentration of MDA and lower GSH-Px activity compared to barrows. Heritability estimates were moderately high for GSH-Px activity, and medium to low for α-tocopherol, FRAP and MDA." @default.
