During this past half century, the tremendous increased knowl edge in the field of nutrition and the awareness of its influence on physical growth and development gradually led to the realization that the central nervous system could also be affected by variations in nutrient intake. The last twenty years has seen a geometric increase in the interest, research, and publication in this field with new con cepts of the role of nutrients in brain maturation and function. The work to-date indicates that nutrition is of major importance to the brain's development and activity, participating in the complex inte grated genetic and environmental system that contributes to the for mation of the mind. While the overwhelming evidence supports the interrelationships of nutrition and brain, some authors have questioned its influence, per se, and have emphasized that the consequences of coincidental forces (sociological, psychological, medical, educational, etc.) may cause major changes that could be erroneously attributed to malnutrition (Eichenwald & Fry, 1969; Frish, 1970; & Polliti, 1970). My personal opinion is that in selected situations malnutrition alone can alter brain function, but that in general it acts as part of a constellation of other interacting factors that may change the normal neurochemical-metabolic constructs producing electrophysiological function that result in clinical capability and performance (Coursin, 1965a, 1965b, 1967). My concern, therefore, is with the mechanisms underlying this phenomena and is addressed to questions such as: How does nutrition affect the brain? and How much does it do so?" @default.
