- W2313019091 abstract "MTGaseのすり身ゲル物性に及ぼす影響を調べた.(1) スケトウダラすり身SA並びにCから調製されたゲルは総じてMTGase濃度増加に伴いゲル強度と変形率の大きな増加を示した.(2) MTGaseの作用性は食塩濃度と関係し,食塩濃度が高いほど酵素によるゲル強度増加が大であった.(3) 加水によってすり身濃度を変化させても酵素機能は発現した.さらに,鮮度の異なる2種のすり身を混合した場合でもMTGaseの機能は鮮度差に影響なく単独すり身のゲル物性がほぼ反映された.(4) ショ糖は添加量増加に伴ってゲル強度と変形率を低下させMTGaseの機能が若干抑制された.一方,馬鈴薯澱粉は添加量増加に伴ってゲル強度は増加し硬くしまった物性に変化した.(5) 30℃以下の坐りで,かつMTGase低濃度の場合,ゲル物性は坐り時間に伴って増加した.一方,40℃と50℃の高温坐りではゲル物性は増加するが,ある時間以上で一定もしくは低下した.(6) G-L結合量はMTGase濃度に伴って増加,特に,SAの場合低温坐りで急激な増加を示した.(7) SDS-PAGEより,坐り温度の違いで若干の差異がみられるが,総じてSAで1.5～3u/g protein以上,Cで3～5u/g protein以上の酵素濃度でMHCの消失が認められた." @default.
