- W2314448566 abstract "食パンの水分活性値について, パンの水分量, 水分吸脱着履歴, 測定温度を変化させることにより, いくつかの方法で測定した。試料は市場に広く普及している大手製パンメーカー製の一般的な食パンを使用した。水分の吸脱着履歴として, 吸着試料は新鮮なパンを五酸化ニリンで脱水後, 調湿塩により一定の湿度に保持したデシケーター内で水分を吸着させ, また脱着試料は, 試料の構造変化のないよう注意しながら通気乾燥法およりシリカゲル乾燥で緩やかに脱水させた。両試料とも水分の調整後, 暫時密封保持し試料内の水分分布を均一化させてから測定に用いた。水分活性の測定は, 半導体センサーによる測定, 平衡重量測定法, PEC法の3種類の方法を用いた。測定は, 温度10, 20, 30, 40℃, 水分含量0～48%, 水分活性0～1の範囲で行った。その結果, 比較的広範囲で明確な履歴現象 (hysteresis) が得られたのは, 平衡重量測定法であった。また, 高水分活性域ではPEC法がよい結果となった。半導体センサーによる測定は迅速簡便に行えるが, 吸脱着履歴など精密な測定には不向きであった。得られた値を用いて, 吸着理論式の適合性を評価した。用いた式は, GAB式, D-A式である。両者とも比較的よい適合性を示す結果となった。" @default.
