- W2314976529 abstract "クッキー，ビスケット，クラッカー，コーンスナック，ポテトチップ，小麦煎餅，うるち米煎餅，もち米煎餅，ポテト煎餅の9種の市販菓子を用いて，調湿保存時の力学特性の変化と，吸着時・脱着時の収着曲線を解析して求めたWm，MC値との関わりを調べた．(1) R.H.7.6～32 %付近では，すべての試料が脆性破断を示した．R.H. 43 %付近より延性破断となって硬化する試料と軟化する試料に分かれ，R.H.88 %付近まで硬化状態が続いたが，それ以上になるとすべての試料が軟化した．(2) 脆性破断領域はすべてWm型の結合水領域に含まれ，硬化領域の大部分はMC型の結合水領域に含まれた．(3) 糊化度の高い試料はMC領域において硬化し，高湿度域まで硬化領域が拡大した．糊化度が低い試料はMC領域から軟化が始まった．(4) 吸着時の収着等温線から計算したWm，MC値より，脱着時の収着等温線から計算したWm，MC値の方が，力学特性値の変化とよく対応することがわかった．(5) 糊化特性値とWm，MC領域内の硬さとの間に高い相関が認められ，糊化に伴うMC値の増加が吸湿後の硬化要因である可能性が強くなった．(6) 単分子層から多重層収着水への変化が誘因となって脆性破断状態から硬化状態へ移行する力学特性の変化が引き起こされた可能性が示唆された．" @default.
