- W2315645918 abstract "Many different natural fats and oils were analyzed for cis-methylene-interrupted polyunsaturated fatty acids by the enzymatic method of MacGee (1959). The method was found to be fairly reproducible and in most cases gave standard deviations of less than 1%. The effect of hydrogenation on the level of cis-methylene-interrupted polyunsaturated fatty acids in sunflowerseed, soybean and rapeseed oils was investigated and it was found that the major portion of these acids was lost before a solid fat index of about 4 was reached, this loss being most marked for the rapeseed oil. The use of non-selective (low temperature, high pressure) hydrogenation conditions rather than selective (high temperature, low pressure) conditions resulted in more of the cis-methylene-interrupted polyunsaturated fatty acids being retained for a given total unsaturation. The analyses on finished products showed that the soft margarine, liquid shortening and salad oils (sunflowerseed, corn) tested meet the Food and Drug Directorate requirements (1968) to make specific label claims for polyunsaturated and saturated fatty acids, whereas the normal margarines, shortenings and hydrogenated soybean salad oil tested did not meet these requirements. No specific label claims for polyunsaturated and saturated fatty acids were made for these latter products. Plusieurs gras et huiles naturels différents furent analysés pour Jeur contenu en acides gras polyinsaturés avec internmtion cis-méthylique par la méthode enzymatique de MacGee (1959). La méthode fut trouvée passablement reproductible et dans la plupart des cas donna des écarts types de moins de 1%. L'effect de l'hydrogénation sure le niveau des acides gras polyinsaturés avec interruption cis-méthylique dans les huiles de tournesol, de soya, et de colza fut étudié. On trouva que la majeure partie de ces acides disparurent avant d'atteindre l'indice en gras solide de 4%; ceci tout spécialement avec l'huile de colza. L'emploi de conditions d'hydrogénation non sélectives (basse température, pression élevée) plutôt que sélectives (haute température, basse pression) permit de retenir plus d'acides gras polyinsaturés avec interruption cis-méthylique pour un total donné de non saturation. Les analyses sur les produits manufacturés montrèrent que la maragarine molle, le shortening liquide et les huiles à salade (tournesol, maïs) examinés rencontre les exigences des règlements des aliments et drogues (1968) en ce qui concerne les déclarations sur étiquette de réclame de contenu en acides gras polyinsaturés et saturés alors que les margarines normales, les shortenings et l'huile à salade soya hydrogénée ne rencontrèrent pas ces exigences.
