- W2316535969 abstract "2000 Wの短波帯の交流を包装済みの味噌600 gに適用することにより，約10分間の処理で味噌の中心温度を70°Cに昇温可能なことが分かった．短波帯処理によるプロテアーゼ活性は，従来加熱よりも40～12°C低い温度で活性が低下し，フォスファターゼは従来加熱よりも20～12°C低い温度で活性が低下し，いずれの酵素も72°Cで完全に失活した．従来加熱処理で40 gの味噌中の酵素を完全に失活させる85°Cまで昇温するのに30分間要したことを考慮すると，短波帯処理は処理時間を1/3以下に短縮し，処理温度を12°C低下することが可能になったといえる．本研究結果より，短波帯処理を用いることにより，既存の出し入り味噌よりも生味噌に近い品質を維持した出し入り味噌を製造できるようになることが期待される．" @default.
