- W2321888321 abstract "パンを50℃で15時間乾燥することによって得られた半乾燥物を試料として塩酸加熱分解法によりパンの総脂肪分を求める方法について検討した。 その結果, 試料15gに対し6N塩酸100mlを添加し15分間直接加熱後45分間煮沸に浴中で加熱する方法がもっとも適当であることを認めた。 ソクスレー法による直接抽出法では全脂質の40～80%しか抽出することはできない。 総脂肪の酪酸価を求めることによりパンの乳脂肪含量を測定した結果, 市販ミルク入りパン5検体の固形物中の乳脂肪分は0～2.15%であることを明らかにした。無脂乳固形分の測定にはパン酵母により乳糖以外の還元糖を発酵した後に Fehling-Lehmann-Schoorl 法により滴定する方法を使用した。 本法により上述の市販ミルク入りパンの乳糖含量を測定した結果, 固形物中の乳糖 (無水物) 含量は1.54～3.68%, 脱脂粉乳に換算して3.10～7.42%であることを認めた。わが国のミルク入りパンには無脂乳固形分はかなり高いレベルで含まれているが, 乳脂肪含量はまちまちであってほとんど零であるのも少なくないことが示された。" @default.
