The effects of the main parameters including kinds of enzyme, dosage of enzyme, pH, hydrolysis temperature,hydrolysis time were investigated. On the basis of orthogonal test, the optimum hydrolytic conditions were decided: temperature 65℃, pH6.0, hydrolysis time 3h and substrate concentration 5:9. Under this condition, the degree of hydrolysis was 9.38%,content of amino nitrogen was 2.03mg/mL, extraction of protein was 71.27%." @default.
