- W2357877187 abstract "The fish rate and muscle nutrition component of P.tayenus were determined using ordinary standard methods to provide the scientific basis for germplasm resources protection,nutrition research,breeding industrialization and release.The results showed that the flesh rate was(73.28 0.55)%.And the contents of crude protein,crude fat,moisture and ash were(19.32±0.03)%,(1.37±0.02)%,(77.35±0.35)% and(1.37±0.02)% in fresh muscle,respectively.The total amount of 17 kinds of amino acids was 14.96%(fresh),with essential amino acids of 6.26%,accounting for 45.66% in total amino acids.According to nutrition evaluation in amino acids score(AAS) and chemical score(CS),the essential amino acid index(EAAI) was 61.38%.The constitutional rate of the essential amino acids accorded with the FAO/WHO standard basically.The content of tasty amino acids was 5.86%,comprising 39.19% in total amino acids." @default.
