- W236077679 abstract "Publisher Summary Little is known about the possible long-term consequences of decontamination on the microbial ecology of meat environments. Although evaluation of the efficacy of in-plant application of meat decontamination interventions in the USA has indicated significant reductions in total bacterial contaminants and prevalence of pathogens, such as Escherichia coli O157:H7, survivors may exist post-decontamination at rather unpredictable levels. In addition, conflicting data exist on the potential for survival and growth of pathogens during refrigerated storage of decontaminated vs. untreated meat in the presence of a reduced and potentially altered natural flora. Moreover, it is unknown whether pathogens that may survive on or cross-contaminate fresh meat post-spraying may adapt to decontamination stresses in situ and develop increased resistance, cross-protection, and virulence. Whether the natural flora may alter the stress responses of pathogens, in addition to potentially inhibiting their growth on meat, is largely unknown. This chapter presents a summary of the current knowledge on the potential for pathogen adaptation and resistance development in fresh meat environments stress and suggests potential strategies for avoidance of adaptation and hardening of pathogenic cells that may survive decontamination to subsequent food-related stresses." @default.
