- W2365591016 abstract "The technology of Ericerus pela eggs protein hydrolysis was studied in this paper.By the orthogonal test,the papain as appropriate enzyme was confirmed,whoes added amount is 1.5%.The optimum enzyme hydrolysis technology was as follows:enzyme hydrolysis temperature 50 ℃,pH value 9.0,time 24 h and ratio of raw materials to water 1∶20.The test result also showed that the protein hydrolysis yield of sample was increased 20.7% by pretreatment before hydrolysis.The fine pretreatment was used for the sample with 20 times 1 mol/L HCL heated at 80 ℃ for 30 min.The protein hydrolysis yield was(58.4)% under the optimum pretreatment and hydrolysis technology." @default.
