- W2371362307 abstract "On the basis of single-factor test,the enzymatic hydrolysis conditions of glutamine-peptides from defatted soymeal by trypsinase were optimized through response surface analysis methodology in which the glutamine content and the degree of hydrolysis(DH) were regarded as indexes respectively.The mathematical regression model was established about the dependent variable(the glutamine content and DH) and independent variables(pH,enzyme amount and hydrolysis time).The results indicated that those effects of pH,enzyme amount and hydrolysis time on the glutamine content were not significant(P0.05),but the influences on DH were significant(P 0.05);the optimum enzymatic hydrolysis conditions were: pH 7.83,temperature 50 ℃,enzyme amount 12.3%,hydrolysis time 3.7 h.Under this condition,the resulted DH is 12.79% and glutamine content is 5.92 μmol/mL." @default.
