- W2390629353 abstract "By using corn gluten meal as raw material,the effects were studied to level of hydrolysis,quantity of dissolve protein,antioxidation ability and ratio of protein conversion from substrate concentration,enzyme addition,hydrolysate pH value,hydrolysis temperature.Firstly,corn gluten meal was conducted through alkali wash,starch removal by α-amylase,and a pretreatment of thermophilic digestion,in order to breakdown higher-order structure of protein and remove starch.Then,Alcalase,which was used as biocatalyst,was to hydrolyze corn gluten meal(10%-15%,m∶V).The effects of substrate concentration,enzyme addition content,pH,and temperature on degree of hydrolysis,were investigated.The content of soluble protein,antioxidative activity,and the ratio of protein conversion were investigated.The best hydrolysis results was obtained by conducting the hydrolysis at 68 ℃ with substrate concentration 13.5%(m∶V),enzyme addition 2%,pH 7.7 and 210 min.Under the optimal condition,degree of hydrolysis of corn gluten meal reached 28.81%,the content of soluble protein of hydrolysates was 31.69 mg/mL,antioxidative activity was 547.83 U/mL,and the ratio of protein conversion reached 36.92%.The solublity of the hydrolysates increased significantly and displayed good antioxidative activity.The results indicated that the hydrolysates had potential and promising application in the filed of food and medicines industry." @default.
