In this way, nanotechnology is a very useful tool for scientists to obtain new materials that can avoid and retard the microbial spoilage of food products. Nanocomposites are polymeric matrices in which nanoparticles can be incorporated to provide a material with specific functions such as high barrier, improved mechanical performance, antioxidant capacity, or antimicrobial activity. Different nanoparticles have been considered due to their strong antibacterial and/or antifungal capacity such as clays in nanoform, silver or zinc oxide nanoparticles, and even cellulose nanoparticles. These nanomaterials act against microbes by different mechanisms, which are generally related with variations in the permeability of the bacterial cytoplasmic membrane. This chapter reviews the most recent advances in nanocomposites for antimicrobial food packaging applications, taking into account both biodegradable (polylactides, starch, proteins, etc.) and nonbiodegradable polymers. The production techniques, the different nanomaterials and the last applications to food products are reviewed in a comprehensive way. In addition, regulatory aspects related to nanocomposites are discussed." @default.
