- W2487013265 abstract "Inorganic nitrite (NO−) and nitrate (NO×) are mostly known as undesired residues in the food chain with potentially carcinogenic effects. The main dietary source of nitrate is vegetables, which account for up to 90% of the daily nitrate intake in people on a typical Western diet. The nitrate content in plants is governed by genetic factors controlling their metabolic patterns and by the quantity of nitrate in the soil. There is a wide variation of nitrate between different species. The inorganic anions, nitrate and nitrite, have been generally considered to be inert end-products of nitric oxide (NO) metabolism. Although it is true that the bioactivity of NO is acutely terminated following oxidation to nitrate and nitrite, recent research suggests that a reverse pathway exists in which these anions are reduced stepwise into bioactive NO again. The nitrate–nitrite–NO pathway is emerging as a possible regulator of physiological functions in the gastrointestinal tract and in the cardiovascular system. In particular, it might serve as a back-up system to ensure NO-like bioactivity also in situations when the endogenous L-arginine/NO synthase pathway is dysfunctional. In addition, this alternative pathway can be harnessed therapeutically in prevention and treatment of disease. Finally, there is an intriguing nutritional aspect to this, since the major supply of nitrate and nitrite in our bodies comes from our everyday diet." @default.
