This chapter illustrates some of the objective difficulties in establishing quantitative functional relations between plant water deficits and physiological processes. Protoplasmic hydration is a frequently cited reason for changes in physiological activity under water deficits. The importance of protoplasmic hydration is best exemplified in seeds where physiological activity increases very rapidly with increased water content. The relation between water stresses and photosynthesis is of prime importance for agriculture and has been studied extensively. Many papers report specific changes in composition and metabolism in water deficient plants, but many contradictions can be found. However, since it is clear that some reactions are more sensitive to water stresses than others, some shifts in metabolism can be expected under water deficits." @default.
