- W2509778836 abstract "サツマイモを原料とするいもかりん糖のテクスチャーを改良する前処理方法として,ブランチング-凍結処理を検討し,極めて有効であることを確認した。ブランチング時間はタンザクの厚みによって異なることがわかった。最適ブランチング時間は厚み3mmのタンザクで25～30秒,5mmで30～40秒,7mmで40～60秒,10mmで60～90秒であった。凍結温度と凍結時間は通常の凍結過程を通しさえすれば,製品のテクスチャーに影響をおよぼすことはなかった。良好に改良されたいもかりん糖の硬さは無処理の硬さの1/2以下であり,油分はおよそ15～20%増加していた。前処理を行なったタンザクの適切な仕上げ油温は140℃附近であった。ポリフェノールによる変色はクリーンアップツーを使用することにより阻止できた。また酸性ピロリン酸ナトリウム溶液でプランチングを行なうとかりん糖の色調が改良された。" @default.
