- W2520998428 abstract "Rapid tests based on reflectometry allow identification of compounds or chemical parameters at low laboratory expenditure on consumables and instrumentation. Thus, it is possible to determine parameters directly and/ or in the course of a production process within a few minutes. According to the German Milk Ordinance, the temperature-time ranges of short-time heating and high-temperature heating of drinking milk are characterized by the inactivation of the milk enzymes alkaline phosphatase (ALP) and lactoperoxidase (POD). In addition to the enzymes mentioned, the inactivation behaviour of the lipase (LIP) was also measured using a Reflectoquant® rapid test. For this purpose, raw bulk milk samples were (discontinuously) heated in a water bath and/or in a pilot heating plant under continuous flow. The thermal enzyme inactivation was determined (double determination) using a rapid test. In the temperature-time range of thermization the thermally induced inactivation of LIP was clearly detectable. At the upper limit of thermization, a residual activity of approx. 10% was determined. For ALP and POD, enzyme inactivation was traced in the respective temperature-time ranges. The rapid tests allow a differentiation between short-time heated and high-temperature heated milk through ALP and POD inactivation. Under practical conditions, the applied reflectometric rapid tests represent an interesting quantitative measuring method for the determination of milk enzyme inactivation." @default.
