- W2524561749 abstract "The analysis of tocopherols in fatty materials is carried out usually by liquid chromatography, in general by means of UV and fluorescence detectors. This technique is successful in determining tocopherols because the eluted sample can be directly injected without any preliminary treatment, due to the selectivity of the detectors. It is usually supposed that tocopherols are present in only one form, in the free state. In our research we found tocopherol esters with fatty acids. These are normally present in low amounts, with the exception of some palm oils; yet in one oil we found only esters while there was a complete absence of the free compounds. Since tocopherol esters cannot be detected by normal liquid chromatography analysis, they have to undergo hydrolysis before being analysed. Besides keeping their vitaminic nature, tocopherol esters can be considered as an excellent analytical reference due to their specific composition, furthermore they are not subjected to oxidation as the phenolic hydroxyle is esterified. The molecular size of the esters also makes it difficult for them to be eliminated from the fatty matrix during deodorisation." @default.
