- W2594650767 abstract "Cancer-protective effects of Se in broccoli are discussed with particular reference to the potential of broccoli containing very high amounts of Se (>500 μg/g) to act as a preventive agent against colon and other cancers. The primary form of Se in broccoli is selenium methyl selenocysteine, which can be easily converted to methyl selenol, a form of Se that may be the most effective for cancer prevention. In addition, Se from high-Se broccoli is metabolized in a unique manner that allows lower accumulation (and therefore lower toxicity) of Se in body tissues. Individual aspects considered include: anticancer benefits of Se; Se in plant and animal foods; metabolism of Se from broccoli and other foods; development of high-Se broccoli; animal studies demonstrating the protective effects of Se from high-Se broccoli against colon and breast cancers; and potential of high-Se broccoli as a safe supplemental source of Se." @default.
