The effect of ultrasound processing on food components is an area of research interest. This chapter highlights the effect of ultrasound processing on anthocyanin pigments present in food systems. The kinetics of anthocyanin degradation is explained and the effect of sonication on anthocyanin pigments is critically reviewed from published literature. Factors affecting the stability of anthocyanins are also explained. Being a non-thermal treatment of growing interest, the latter portion of this chapter explains the need for research for in-depth understanding of the intricate changes to food components (including anthocyanins) during sonication." @default.
