The total carrots and turnips production in the world was about 38.84 million metric tons (MMT) in 2014. The United States of America produced less than 4% of global carrots production with 1.44 MMT. The chapter also describes the effects of pretreatments and other aspects of carrot juice processing. The juice yield by press method was suggested to be related to the protopectin and lignin content of the raw material and some physiological characteristics. Carrot pomace is a rich source of carotene, which can also be used as a functional ingredient in number of applications. The extraction of carotene has been reported to be higher in pulsed electric filed (PEF) treated carrot pomace as compared to untreated one. Using micro emulsion, the extraction efficiency of carotene can be increased." @default.
