- W2798021748 abstract "Guar gum is a polygalactomannan derived from the endosperm of the legume plant Cyamopsis tetragonolobus. Structurally it consists of a backbone of (1-4)-linked β -d-mannopyranosyl units with single α-d-galactopyranosyl units connected by (1-6) linkages to, on average, every second main chain unit. It provides extremely high viscosities even at a very low concentration (≤1% w/v) in aqueous solutions. Due to these properties it is widely used as gelling agent, thickener, stabilizer, emulsifier, foam stabilizer, and antistaling agent in several food industries. Furthermore, in partially hydrolyzed form it is also used as soluble type of dietary fiber, and its demonstrated prebiotic effect results in the lowering of blood glucose and blood cholesterol levels. Guar gum is also used to prepare low glycemic–index food products due to its application as dietary fiber. Apart from these applications, some recent uses of guar gum are in the preparation of biodegradable films for food packaging applications and as wall material for flavor encapsulation. In this chapter, the cultivation, manufacture, and physical and chemical properties of guar gum are discussed. Its various uses and advantages in the food industry are described, and the use of guar gum as a soluble type of dietary fiber and its various physiological effects are detailed. Some newer and recent applications of guar gum for flavor encapsulation and development of biodegradable films are also described. In addition, potential future areas of research for guar gum are discussed." @default.
