- W2802043588 abstract "Tyrosinases are type-3 copper proteins widely distributed in bacteria, fungi, plants, invertebrates, and mammals. Microbial tyrosinases are the most used in several applications. Tyrosinases catalyze the oxidation of mono- and di-phenolic compounds to corresponding quinones with the concomitant reduction of molecular oxygen to water. The physiological role of tyrosinases in the biosynthesis of melanins has been used for the production of colored and dyeing agents. Moreover, the crosslinking activity of tyrosinases has found application in food processing and in the functionality of materials. First characterized from Agaricus bisporus, tyrosinases were found in other fungi with relevant very promising properties for biotechnological applications. The limit of these applications remains in that native fungal tyrosinases are generally intracellular and produced in low quantity. Tyrosynases have numerous practical applications in several fields and their potential is quite high. Other mono-oxidases such as laccases have in some aspects superposed potentials. Accordingly, it can be suggested that for the valorization of plant biomass, deep evaluation of the associated effects should be performed." @default.
