The isolation and identification of LAB were performed, followed by the evaluation of safety parameters (DNase test, hemolytic and gelatinase activity, antibiotic susceptibility testing and plasmid extraction), gastrointestinal tract tolerance, probiotic potential (auto-aggregation, co-aggregation, hydrophobicity, β-galactosidase activity and antibacterial activity), exopolysaccharide production, molecular identification, and cell immobilization using soybean as support. Three isolates (CSL3, CSL4 and CSL16), identified as Lactobacillus casei, were shown to be microbiologically safe, demonstrated probiotic potential in vitro and were producers of exopolysaccharide. Isolate CSL3 was selected to be immobilized on the surface of the soybean grains. After immobilization, viable cell counts of L. casei CSL3 were 6.23 log CFU/g and 6.71 log CFU/g for 30 days of storage after freeze-drying and under cold storage, respectively. Thus, L. casei CSL3 was proven to be safe for consumption and to have probiotic potential in vitro. It was demonstrated that soybean can be used for the immobilization of probiotic bacterial cells, maintaining their viability, which is an advantageous feature for future application in food." @default.
