With increasing globalization of markets, demand of consumers to eliminate synthetic antimicrobial compounds, and demand to develop ready-to-eat (RTE) foods, new technologies are needed to prevent food contamination as well as ensure a long shelf life and food safety. Developing formulations based on replacing natural antimicrobials with synthetic antimicrobials is under study as a new alternative. However, these compounds have a strong taste and are often volatile, unstable, or not necessarily soluble. Therefore, they need to be stabilized to ensure their efficiency during food processing and also during storage time. Developing nanoemulsion, encapsulation, and entrapment in soluble polymers or in biodegradable packaging has also been proposed as novel technologies to ensure food safety. These technologies are gaining interest from researchers and industries due to their potential in preventing the growth of pathogens. Furthermore, development of combined treatments using natural antimicrobials and nonthermal treatments is a promising avenue because of the possibility of enhancing the safety of food products. Nonthermal treatments have advantages when used on fresh products. However, the treatment intensity needed to eliminate the pathogens, or reduce populations of total microflora, can affect the sensorial and physicochemical properties of the food. The use of natural antimicrobial compounds in combination with nonthermal treatments has the advantage of acting in synergy and can improve the sensitivity of the bacteria to the treatments. Combined treatments permit the use of lower antimicrobial concentrations, the reduction of treatment time, and the preservation of the sensorial, nutritional, and physicochemical properties of the food.
