The rapid, accurate, and sensitive analytical techniques for their analysis in different kinds of food samples are becoming increasingly important from a nutritional standpoint. High-pressure liquid chromatography (HPLC) is the most widely used separation technique for these purposes. This chapter summarizes different chromatographic methods used for the analysis of phenolic compounds from different classes, mainly flavonoids, phenolic acids, and anthocyanins, that were used in the last year.
