The global kiwifruit industry was developed on ‘Hayward’, largely because of the good storage potential of that cultivar. However, as the volume of fruit has increased, there has become a need to widen both the harvest and marketing windows for the fruit. It is, therefore, essential to know how early the fruit can first be harvested and also when fruit are more able to withstand long-term storage at low temperatures. Thus, the harvest criteria are becoming more refined to match fruit to marketing requirements. Fruit for immediate sale must be capable of ripening to a good eating quality, whereas fruit for long-term storage must also retain their firmness and not develop physiological disorders whilst at low temperature for a period of months. A consequence of this is that the concept of a single “optimum” harvest index has little value; instead, harvest indices are now matched more specifically to the postharvest performance required from the fruit. As harvest indices become more specific, the limitations of the easily measured aspects of fruit composition that are currently used as such indices are becoming more apparent. This is exacerbated in the commercialization of yellow-fleshed kiwifruit, in which the process of chlorophyll degradation responsible for degreening has to be a major element of deciding when to harvest fruit. As the specificity of harvest indices progresses, the potential for the use of biochemical or molecular markers of fruit development and maturation is enhanced, given that the information provided goes beyond that which can be derived from simple compositional measures. Even when fruit have been harvested at the “correct” predetermined physiological state, it should always be remembered that the postharvest performance of the fruit depends on the temperature management applied to that fruit.
