• W2897974113 abstract "Since ancient time, garlic (Allium sativum) has been used as a culinary ingredient, folk remedy and traditional medicine, and more recently as a nutraceutical, dietary supplement as well as a natural health product. Typically, garlic can be cultivated from cloves but planting garlic in soil results in high risk of various diseases, low yield and quality of garlic bulbs. There is a growing trend to propagate garlic from air bulbils. Plants obtained in this way are free from viruses albeit the size of garlic depends on time of planting and size of planting material. However, there is a shortage of data regarding chemical composition of garlic from air bulbils. The concentration of protein, carbohydrates, fat, polyphenolic compounds as well as antioxidant activity depends on the time of harvest. Mature garlic from air bulbils and garlic cultivated from cloves have similar concentration of moisture, total carbohydrates, and fat. On the contrary, they have different levels of protein. Currently, the presence of organosulfur (alliin, cycloalliin, S-methyl-L-cysteine, S-allyl-L-cysteine, S-allylcysteine) and phenolic compounds (sinapinic acid, p-coumaric acid and isorhamnetin) was identified in garlic cultivated from air bulbils. Both groups of compounds are responsible for antioxidant properties of garlic and its health benefits. Recently studied garlic cultivars from air bulbils exhibited antioxidant activity; the highest level was observed in plants harvested in the spring, and the lowest in the summer.
