Visual methods combined with some objective methods are still used by the USDA Grading System for beef carcasses. Lamb-carcass grading is still based on visual methods. The backfat probe is a small, inexpensive stainless steel ruler useful for estimating live and carcass composition, but ultrasound technology has replaced the use of the backfat probe.
