Emphasis is given on exopolysaccharides produced by mesophilic and thermophilic lactic acid bacteria, which are important in dairy industry. Exopolysaccharides from lactic acid bacteria can be divided into two groups: homopolysaccharides and heteropolysaccharides. Homopolysaccharides consist of four subgroups including α-D-glucans, β-D-glucans, fructans and others like polygalactan. Exopolysaccharides producing starter cultures are used in fermented milk to improve viscosity, prevent syneresis, improve consistency and minimize mechanical damage resulting from blending with fruits and flavourings." @default.
