To illustrate: At the same time that the Jefferson Area Board for Aging (JABA) in Charlottesville, Virginia, was going green, several older adults at one of JABA's rural centers pointed out that the center's lunchtime meals were not suitable for diabetics. Too many sugars and carbs, too much salt- all too common with industrially prepared foods. This concern was perfectly timed with JABA's launch of a local foods initiative aimed at reducing environmental costs by lessening the distance foods travel from farm to table and a corresponding effort to redesign its menus to be healthier, thanks to foods that arrive fresher. Those older adults quickly became ambassadors for the healthy meals that local foods produced. Here the personal need for healthy food turned out to be well aligned with positive steps for the area's agricultural economy and a smaller environmental footprint. The emphasis on local foods became a source of revenue production for JABA's senior meals program when the agency opened Top Broccoli Catering and began offering its services to the public after huge success in-house. Top Broccoli serves what they call localicious fare to private and public groups· and organizations in the Charlottesville area- for parties of twenty to as many as 300 people, including picnics, house and office parties, and large forums at Piedmont Virginia Community College, all using local produce as much as possible. There's an even larger story here. What we see in this initiative is that one intervention produced far more than one positive outcome. And one good step led to another, until entirely and sustainable community systems began emerging. This story gives us a based on synergy that's needed for these economic times. This new math is the point of view developed in the Viable Futures Toolkit, a user-friendly collection of planning tools and 100-plus practical examples like the one just mentioned. The toolkit is designed to help communities prove that sustainability and aging go hand in hand- and that these hands are joined to other generations as well. The toolkit is one of the products available through the Viable Futures Center (www. viablefuturescenter.com), which offers practical tools and evidence-based strategies for today's most pressing community problems, all designed to work in tough fiscal times. JABA has taken gray to green much farther and is showing that aging services can lead the way. As routine organizational practice, in addition to paper and electronic recycling and the repurposing of office supplies, JABA uses environmentally friendly cleaning supplies and compostable tableware. In addition, the organization is committed to creating multiple-function community centersrather than senior centers- built with sustainable materials and universal design. The goal is to bring generations together for shared purposes while increasing transportation efficiency. Further, the organization has teamed up with other area agencies to ensure that leftover food from the local farmers' market is being put to good use. The act of food recovery, also known as gleaning, is the collection of fresh, healthy food for distribution to those in need and follows a basic humanitarian ethic, that food not eaten should not go to waste. The project has served as a platform for developing a farmers' market food distribution process for those living in public housing, including gleaning the surplus products, using food stamps at the market, and the creation of local currency for low-income households to purchase products at farmers' markets. …" @default.
