- W2912765587 abstract "The formation of biofilms of thermoresistant streptococci in a dairy manufacturing plant involves three species: Streptococcus thermophiles, Streptococcus bovis and Streptococcus macedonicus. These bacteria are thermoresistant, with a proportion of the population surviving pasteurisation and colonising the regeneration of plate heat exchanger pasteurisers as biofilms. The growth of these biofilms can be rapid, with the numbers of bacteria being released into pasteurised milk following pasteurisation reaching >106/ml after 7–8 hours operation. The release of bacteria from these biofilms contaminates the product, resulting in unacceptably high levels of bacteria. The numbers of bacteria contaminating the product can result in the product being unacceptable to customers, and in some cases can result in spoilage issues, depending on the product being manufactured. Attachment of a thermoresistant streptococcus to the stainless steel substrate has been shown to be mediated by a protein associated with the cell surface. Proteolytic enzyme cleaners have the potential to improve the cleaning methods currently used in dairy manufacturing plants." @default.
