Membrane filtration technology has been commercially used in dairy industry for over a half century, and it is dominating current whey protein manufacturing across the world. For whey protein used in infant formula, glycomacropeptide (GMP) shifts the amino acid profile away from the breast milk due to absence or low content of essential aromatic amino acids. Ion-exchange chromatography can be used in combination with ultrafiltration (UF) to recover GMP from whey. Dried sweet whey, demineralized whey powder, whey protein concentrate (WPC), whey protein insulate (WPI), and whey fractions are the major whey and whey protein products commercially available. The WPC and WPI productions are designed to remove the lactose and concentrate protein from liquid whey." @default.
