Methodologie et resultats: Pour ce faire, le sirop mixte a ete obtenu a partir des jus de gingembre et d'ananas suivi d’ajout de sucre et pasteurisation a 95 °C pendant 30 s. Le sirop mixte a ensuite ete stocke a 5 °C et 22°C pendant 6 jours pour suivre les parametres physico-chimiques. Les resultats donnent pour les sirops conserves a 5 °C et 22 °C, une variation graduelle de pH du sirop mixte de 5,16 ± 0,01 a 5,29 ± 0,01. Concernant l’acidite (%), la variation est de 0,9 ± 0,01 a 0,95 ± 0,06. Pour la densite cette variation est de 1,18 ± 0,02 a 1,2± 0,02 et pour le degre Brix, la variation est de 42,2± 0,14 a 43,5± 0,28. Conclusions et application: Certes, il y a des variations mais celles-ci ne sont pas significative (p < 0,05). Ce sirop concu peut donc etre valorise par l’industrie agro alimentaire par la production de boissons non alcoolisees. Methodology and results: To do this, the mixed syrup was obtained from ginger and pineapple juice followed by sugar addition and pasteurization at 95 °C for 30 s. The mixed syrup was then stored at 5 °C and 22 °C for 6 days to monitor the physicochemical parameters. The results for syrups stored at 5 °C and 22 °C show a gradual change in pH of the mixed syrup from 5.16 ± 0.01 to 5.29 ± 0.01. For acidity (%), the variation is 0.9 ± 0.01 to 0.95 ± 0.06. For density this variation is from 1.18 ± 0.02 to 1.2 ± 0.02 and for the Brix degree, the variation is from 42.2 ± 0.14 to 43.5 ± 0.28. Conclusions and application of findings: with regard to the result, there were variations but which were not significant (p<0.05).
