- W2922083059 abstract "Abstract Fermented beverages have been produced by mankind for several thousand years. Even long before microorganisms had been discovered, humans used them for the production of ethanol containing beverages. It can be assumed that many different, and unknown, microorganisms were responsible for these fermentation processes, and the given fermentation product strongly relied on substrate, weather, and surrounding environment. Especially during the Middle Ages, fermented beverages possessed the advantage of being free from pathogenic microorganisms, as compared with the often microbially polluted drinking water. Hence, fermented beverages had been consumed frequently and helped to prevent diseases. Since these times, many advances in microbiology have been achieved. Reproducible fermentation processes have been developed and the production of alcoholic beverages, like wine and beer, can be termed “industrial production.” These production processes exhibit the advantages of controlled and reproducible fermentation processes with the repeatable production of high-quality products. The disadvantage of these processes is the reduced flavor formation compared with traditional fermentation processes using several different microorganisms. As an example to overcome this, the development of a controlled fermentation strategy for the simultaneous fermentation of different microorganisms is described in this chapter, in addition to other topics." @default.
