- W2922224467 abstract "The purpose of this study was to fabricate zein-based phytosterols (PSs) nanodispersions to improve the water-solubility of PSs. Absolute ethanol and 80% ethanol were selected as the optimized solvents for PSs and zein, respectively. The optimum fabrication condition was selected as stigmasterol: zein of 1:5, ultrasonic energy density of 585H/mL, ultrasonic power of 200 W and pulse mode of 1 s. In this condition, the average particle diameter, polydispersity index, ζ-potential, encapsulation efficiency (EE) and loading amount (LA) of nanodispersions were 336.74 ± 4.86 nm, 0.127 ± 0.002, 57.19 ± 0.72 mV, 97.00 ± 0.02% and 19.4 ± 0.01 (g/100 g), respectively. Ultrasonic treatment had great influence on the fabrication of nanodispersions, which significantly decreased the average particle diameter and increased ζ-potential, EE and LA. The scanning electron microscope and differential scanning calorimetry results showed that stigmasterol was successfully encapsulated in zein with relatively uniform size and smooth surface morphology. The results showed ultrasonic assistant anti-solvent precipitation would be of relevance to the preparation of food-grade water-dispersible PSs or other hydrophobic nutrients.
