- W2932393879 abstract "Abstract The world’s best-known fortified wines are Sherry, Port, Madeira, and Marsala. Others are Moscatel de Setubal, Vermouth, and Commandaria. They have in common a high alcohol content [15%–22% alcohol by volume (ABV)] due to the addition of vinous alcohol or grape spirit during the winemaking process, after being fermented or partly fermented, producing a wide range of styles. The different production procedures are summarized, each one with specific singularities, resulting in wines with unique organoleptic characteristics, usually strongly dependent on the maturation processes. This chapter comprehensively describes the most recent scientific knowledge, reported from 2007 to 2017, essentially about the volatile compounds that characterize and define the aroma of each wine, and the polyphenolic composition that defines and influences their chromatic characteristics, as well as, how they contribute to the technological advances of each fortified wine. Also, the occurrence of compounds that can affect their quality is also addressed." @default.
