- W2963019676 abstract "Abstract Blueberries and cranberries (Vaccinium spp.) are some of the berries with the highest production in North America. Both are typically mechanically harvested for processed market, although the methods for harvest may differ for each species. About 20% of the processed fruit remains as pomace or press cake, which is a rich source of fibers and bioactive compounds. Some of the compounds in these by-products are anthocyanins and proanthocyanidins, which are mostly concentrated in the berry skins, and can be used as a natural colorant or for their health-promoting properties. Although the pomace may be incorporated directly into food products, different methods are also used for extraction of bioactive compounds from each of the berries, including thermal or solvent extraction, extrusion, pulsed electric field, and pressured liquid extraction. Alternatively, the pomace can be used as substrate in solid-state fermentation. Production, characteristics of the pomace, and their utilization are explored in this chapter." @default.
