- W2979512186 abstract "Anthocyanins are natural compounds present in the plant kingdom that are characterized by typical orange, red, purple, or blue pigmentations, which are in most cases responsible for the color present in fruits, nuts, flowers, and vegetables in general. They play key roles in the plants (including protection from UV radiations and antimicrobial and antioxidant activity), and they have gained researchers’ attention based on their many human health-promoting properties, based on epidemiological studies that have highlighted a direct correlation between the consumption of colored vegetables and the prevention/reduction of, for instance, cardiovascular diseases, inflammation, and diabetes, among others. Moreover, several studies on animal models, cells in culture, and human clinical trials indicate the involvement of anthocyanins (and their aglycone forms, anthocyanidins) in antioxidant, antimicrobial, visual, and neurological protection. These potentialities make them suitable candidates for the production of functional food (but also pharmaceutical, cosmetics, and dietary supplements) due to the presence in nature of a very high number of different compounds belonging to anthocyanins, every one characterized by a well-defined chemical structure and each able to perform different biological roles. In this chapter, we describe the chemical and biological features of these molecules so as to clarify the increasing interest in their use, especially in functional food and the elements that characterized their metabolism and implication for disease alleviation, and we also describe their production and accumulation." @default.
