Supercritical fluid extraction (SFE) has been popularized as an extraction technique, but it is also useful for elimination of the undesirable materials (toxins) from foods. SFE is a green, non-conventional extraction/separation technique that employs SCF as solvent. Besides food and non-food applications, SFE has been useful in isolation/separation of food toxins. These applications include elimination of nicotine and other heavy metals and removal of pesticides, to name a few. SFE is a promising technique employed for the reduction of toxin levels in foods. This chapter essentially deals with SCFs and its applications for removal of toxins from the food. When SCF's comes in contact with sample matrix the undesired compounds to be removed get dissolved into the solvent under super critical conditions. Several process parameters like temperature, pressure, nature of solvent etc plays a significant role in determining the solubility characteristics. The major advantage of SFE over other extraction techniques are its simplicity and sustainability that aids in easy removal of targeted compounds without any residues of the solvent. Further, SFE as an analytical tool helps in separation and detection of toxins in a single step. Thus, SFE remains a promising approach for removal of toxins from foods." @default.
